Actually, you need 3 select lines (not 6) for a 6 input multiplexer. Three lines can select from 8 inputs, so I would probably redraw it as an 8 input device with 3 select lines.
I believe the author said the select signal is one hot, that's why there are 6 of them
I am not sure I understand the issue you are trying to point out in the tutorial. Could you elaborate on it?
